2 qt. milk
2 T cumin seed
2 Bay leaves
spring rosemary or 1/2 t dried
1/4 c. olive oil
2 large onions
2 t. salt
4-6 cloves garlic (minced)
2 t ground cumin
8 c. fresh/canned corn
1 bunch chives
6 poblano chilies (roasted, peeled and seeded)*

Directions:
Directions:
Combine milk, cumin seed, bay leaves and rosemary in a medium saucepan and bring nearly to simmer. Remove from heat and let sit 20 minutes.

Heat olive oil in a large saucepan & cook onions with salt until golden brown. Add garlic & cumin and cook 5 minutes. Stir in corn and diced chilies and cook on low 5 minutes.

Strain milk into the chili mixture. Simmer 15 minutes. Puree 1/3 of the chili mixture, then add back to the remainder.

*(Roast chilies over gas flame until charred). Put in a plastic bag 15 min. Pull off skins and rinse in cold water)
