1 cup cornmeal
1 cup all-purpose flour
1/3 c sugar
2 1/2 t baking powder
1/4 t salt
1 cup buttermilk (or 1 T Vinegar mixed into milk to make 1 cup…stir)
1/2 cup (1 stick) butter, melted
1 egg, beaten

Preheat oven to 400. Grease muffin pans.

In a large bowl, combine cornmeal, flour, sugar, baking powder and salt.

In a second bowl, mix buttermilk, melted butter and egg.

Pour liquid mixture over dry mixture. Stir gently until dry ingredients are just moistened.

Pour batter into muffin cups (8 large or 12 smaller). Bake at 400 for 15-20 minutes or until golden. Remove from pans, serve hot.

You can substitute Bob’s Red Mill Gluten free All Purpose flour for regular flour.

Variations: Add 1/2 - 1 cup corn kernels or crisp fried bacon. You can also add 1T chopped fresh (deseeded jalapeño pepper)
