3T Extra Virgin Olive Oil
2 cups diced butternut squash
2 tsp chopped garlic
1/2 tsp 'adobo' season salt (or whatever your favorite is!)
1 T dried chopped or minced onion
2 C Heavy cream
3 C Shredded Cheese (Sharp Cheddar, Gruyere - use your favorites and feel free to blend)
3 T Fresh Sage leaves - cut into ribbons
2 C dried Mini Penne Pasta

Topping:

1 1/2 C Panko Bread Crumbs
2 T Extra Virgin Olive oil
1 T Butter
1/2 t garlic salt
2 t parsley
1 T Truffle oil

Directions:
Directions:
Preheat oven to 350

1) Cook pasta according to directions - DO NOT OVERCOOK! Drain & Set aside
2) Heat frying pan and add EVOO - use medium high heat
3) Saute squash until partially cooked through and lightly browned
4) Add garlic, adobo & onion and cook for a couple minutes more
5) Reduce heat, add Heavy cream and reduce heat to low
6) Add cheese - stir until melted
7) Add cooked pasta to cheese sauce, stir gently
8) Add fresh sage and lightly stir, pour into 8x8" baking dish

Topping:
1) Heat EVOO and butter until melted in medium frying pan
2) Add Panko, garlic salt and parsley and toss until coated in oils
3) Top mac-n-cheese with crumbs, drizzle truffle oil over top

Bake casserole at 350 20-25 minutes or until bubbling at edges and lightly browned on top

Be very careful not to overcook pasta - it continues to cook in baking
Use ANY kind of cheese you enjoy - one kind or blend.

If you want to speed the process, you can finish in microwave. Just make sure that the cheese sauce is thoroughly melted, and cook the bread crumb topping until lightly browned in frying pan. Cook in microwave for 4-6 minutes - or until heated thoroughly.

This recipe doubles easily.
