Ingredients: 1/2 teaspoon coconut extract 1 8 oz. carton Sugar-Free Cool Whip (divided) --thawed 1 20 oz. can crushed pineapple in juice 1 box 4-serving instant sugar-free vanilla pudding mix 1/2 cup angel flake coconut 1 10 oz. sugar-free angel food cake

Directions:Stir coconut extract into carton of Cool Whip until thoroughly blended.
Drain off 1/3 cup pineapple juice (keep for other uses). Combine pineapple and remaining juice, 1 cup Cool Whip, and pudding mix. Let stand 5 minutes.
Place coconut in a non-stick skillet. Heat over medium heat, stirring constantly until coconut toasts to a light golden brown. Remove from heat and pour onto paper towel to cool.
Cut cake crosswise into thirds. Spread half of pudding mixture over bottom layer of cake. Top with second layer and top with remaining pudding mixture.
Add top layer and "frost" the entire cake with remaining Cool Whip. Sprinkle toasted coconut over Cool Whip. Chill before serving. |
