12 medium potatoes
1/2 pound butter
whipping (heavy) cream
1 tablespoon Miracle Whip
salt and Cayenne pepper to taste

Directions:

In a large pot, boil potatoes in slightly salted water until tender. Drain well and place in a large bowl.
Mash potatoes well using enough whipping cream to make pasty.
Add butter. Miracle Whip, salt and pepper.
Mix well
Whip with enough whipping cream to form peaks.

I collected this recipe in the 1970's. It works very well as a base recipe. It can be changed or adapted to suit your mood, occasion or preference of your guests. The main ingredients are the potatoes (with skin left on), butter and cream.
I sometimes add shredded cooked cabbage... maybe other greens...and chopped onion. (regular or green onion) This then becomes a dish called Colcannon. You will LOVE it ! and good for using up leftover cooked greens.
