1 package,( two layer size) white cake mix
1 tablespoon all-purpose flour
1 (4 serving size) package strawberry gelatin
1/2 cup vegetable oil
3/4 cup water
1/2 cup frozen strawberries, thawed
4 eggs
For strawberry frosting:
1/2 cup butter at room temp
1 (1-pound) box confectioners' sugar
1/2 cup frozen strawberries, thawed
For Decoration:
Fresh strawberries (optional)
Red decorators' frosting (optional)

For cake:
Combine dry cake mix, flour and dry gelatin in large bowl of electric mixer. Add oil, water and strawberries; mix about one minute on medium speed.Add eggs one at a time, beating about 30 seconds after each addition.

Grease and flour an elephant mold cake pan, or 3 eight or nine inch cake pans. Pour batter into pan(s). Bake in pre-heated 350º oven for 25-30 minutes, or until cake tests done.Let cool in pan(s) about ten minutes, then turn out onto wire rack and let cool completely.

While cake is baking, prepare frosting. Beat butter in large bowl of electric mixer. Gradually beat in confectioners' sugar. Add strawberries, a small amount at a time, until frosting is of desired spreading consistency.

When cake is cool, frost with strawberry frosting (fill and frost if making layer cake). Decorate with fresh strawberries and red decorators frosting, if desired.

This makes a large very sweet cake.You could, if you like, instead of the icing, use whipping cream as filling and frosting... with fresh strawberries on top and between layers.

Years ago, when Flora and David, along with several other family members of Circus Flora, were camped at Three Creek Farm in the grassy yard across from the Basset kennel,there was an incident when this cake SAVED THE DAY! While the Circus was in residence there were frequent bar- b- ques and picnics, all celebrating something! One particular day,the night before there having been a birthday or some gypsy gala worthy of this beautiful pink cake, Flora had inadvertently been left alone...
presumably safely tethered in the grass... forgotten...(elephants get bored with nothing to do.).
The several workers in the stable headed out for lunch... as they approached to pass the kennel they suddenly saw Flora... on the kennel side of the road, trunk up and trumpeting . She charged in to the kennel yards, pushing in the chain link fence... Bassets bolted in all directions !! Mayhem! Flora ...got her foot stuck in a folding chair rushing around... tipped over tables at the fire site,...She discovered the trash cans not yet emptied. Eureka! she found the leftover Pink Elephant Cake!!! Suddenly calmed and completely happy...
