3 ½ tsp extra virgin olive oil
½ lb. ground Longhorn Beef
1 zucchini diced small
1 medium yellow onion diced small
1 garlic clove minced
Coarse salt and ground pepper
¼- ½ cup grated Parmesan cheese
4 cups cooked rice (brown or white- your choice)
½ cup fresh breadcrumbs
4 large bell peppers (color of your choice), halved lengthwise with seeds and ribs removed

Preheat oven to 400. Cook longhorn beef in preheated skillet using 1 tsp olive oil. Transfer beef to medium sized bowl when done. Add 1 tsp olive oil to skillet and cook zucchini, onion and garlic approximately 8 minutes or when vegetables are tender. Season with salt and pepper. Add vegetables, parmesan rice and 1 tsp olive oil to longhorn beef. Season to taste with salt and pepper then stir with spoon to combine. Next combine breadcrumbs, salt, pepper and ½ teaspoon olive oil in small bowl. Either spray baking sheet with cooking spray of choice or brush with olive oil. Place peppers on sheet. Divide rice/beef mixture among the peppers and top with breadcrumbs. Bake until breadcrumbs are browned and peppers are tender approximately 30 minutes.

Longhorn Beef Recipes
Longhorn Beef can be used in any of your favorite beef recipes. The only difference is that there is little to no shrinkage due to its leaness. It cooks quicker, therefore over cooking causes the beef to be tough. The flavor is a “true” beef flavor! It also easily holds its shape and form!
I have personally tested the ground beef in tacos, spaghetti sauce, meatballs, hamburger patties and meatloaf. I have also trialed the T Bone steaks and tenderized round steak. Season with your favorite seasoning and cook traditionally being careful not to over cook. Tex Joy is my personal favorite seasoning. It works with almost any recipe.
