Ingredients: 1 tabelspoon butter, melted 1 medium onion , chopped 1 very large Zucchini, coarsley shredded, unpeeled 5 cups chicken broth 2 cups cooked kidney beans, optional but good 1 -2 cups sliced mushrooms, optional but good thyme garlic (could be powder) grated cheese (of your choice)

Directions:saute the onion...add the broth and zucchini in a sauce pot and bring to a boil, then simmer until the zucchini is done then add 1 1/2 cup half and half and 1/2 cup loosely packed grated cheese of your choice..serve. If you want to use a crock pot put all main ingredients into the pot...with 3 cups of broth. Cook for 4 hours on LOW. About an hour before serving, add 2 cups of milk and 1 cup of cheese. |

Notes: This recipe came from a Connemara friend in Cobleskil, New York. I was part of an Inspection Team visiting her farm, inspecting her Connemara ponies. As a side interest, Lora and her husband raised mice to sell to laboratories, and as pets. They were darling little creatures. I think there were hundreds in her house!!! all in beautifully clean cages... zucchini soup was not on the menu for the mice. This delicious soup was hospitality for the Inspectors!!
