Ingredients:  
1 med – large eggplant
3 Tbs. olive oil
3 Tbs. Italian seasoned dry bread crumbs
3 Tbs. Parmesan cheese


TOMATO SAUCE

1 can diced tomatoes 15 oz
1 can tomato sauce 15 oz
1 clove garlic, chopped
1 bay leaf
1/2 tsp dried oregano
1/2 tsp dried thyme
1/8 medium onion, diced or a handful of garlic chives, chopped

Combine all ingredients, simmer for 30 – 45 minutes

Peel and slice eggplant in ½ -3/4 inch slices. Brush slices sparingly with olive oil on both sides. Sprinkle both sides with bread crumbs and parmesan cheese. Spray baking pan or cookie sheet large enough to contain eggplant slices in one layer with cooking spray. Bake at 350 for 20 minutes or until soft.

Serve with Tomato Sauce
