2 c very fine sugar
2 large lemons
2 T flour
4 eggs, well beaten
¼ t salt
2 pastry shells for 9” pie

Directions:
Directions:
Wash and dry lemons. Remove ends. Slice into paper thin slices crosswise. Retain as much juice as possible, adding to bowl with slices. Remove seeds and toss lemon slices with sugar and salt. Let stand covered at room temperature for 3 hours to over night, stirring occasionally. Heat oven to 450°. Prepare pastry and line 9” pie pan. Combine beaten eggs and flour, then with lemon slices. Pour mixture into pastry shell. Top with remaining pastry. Cut slits in top to allow steam to escape. Bake at 450° for 15 minutes, then lower temperature to 350º and continue baking 30 to 35 minutes longer. Serve warm.
