1½ c oil
2 c sugar
3 c flour
1 t salt
1½ t baking soda
1 t cinnamon
1 t cloves
1 t nutmeg
1 t vanilla
3 eggs
1 c chopped nuts
2 large apples, finely chopped or grated

Directions:
Preheat oven to 350º F. Grease two loaf pans or one large Bundt or tube pan. In medium bowl, combine flour, sugar, baking soda, salt, cinnamon, cloves and nutmeg. Stir with whisk to mix together. In large bowl, mix eggs with a hand mixer til light in color and foamy. Add oil and vanilla. Beat well. Stir in flour mixture with spoon. Continue stirring batter until flour is completely incorporated. Add apples and nuts. Stir to mix into batter. Scrape batter into prepared pan. Bake for 1 hour and 15 minutes or until toothpick inserted in center comes out clean. Turn out cake onto wire rack. Prepare Brown Sugar Glaze (see following recipe). Transfer cake to serving plate. Pour glaze over cake while still hot.
