1 (3-lb.) fryer chicken
salt and pepper to taste
½ c. flour
½ c. vegetable oil
1 c. onion, chopped
1 c. celery, chopped
3 cloves garlic, chopped
½ c. green onions, chopped (reserve tops to garnish)
1 small bell pepper, chopped
1 c. mushrooms, chopped
1 qt. water

Directions:

Cut fryer into serving pieces and season with salt and pepper; set aside. In a heavy pot, make roux using flour and oil. Cook until brown. Add all seasonings except mushrooms. Saute until done (15 minutes). Add chicken and stir well. Cook approximately 20 minutes. Add water, mushrooms and green onion tops. Cover and let simmer for approximately 1 hour. Season to taste.
