1 package of 16 dried beans
Ham hock or ham bone
1 tablespoon parsley
2 tablespoons salt
9 ribs chopped celery with leaves
2 bay leaves
½ teaspoon thyme
2 cup water
1 can tomatoes (1 lb.) undrained
2 sections garlic, chopped
2 onions, chopped
½ teaspoon red pepper
6 pieces chicken
1 pound link sausage, thinly sliced

Add together, beans, parsley, salt, 3 ribs of celery, bay leaves, and thyme with about 2 cups of water. Simmer for 2 to 3 hours, adding water as needed.

Add tomatoes, garlic, onions, red pepper, and the rest of the celery and cook uncovered for 2 hours to creamy stage.

Pre- boil the sausage and drain

Boil the chicken separately and reserve the broth to add to the pot beans. Remove chicken from bones and add to pot with the sausage.
Cook for an hour or so. It is better the next day. Even better after freezing.

I have been making this for so many years that I do not know where I got it. I made it before you could buy the beans in one package. We used to all get together and buy one package of each bean and make our own . This was really a group project. It takes a while to make it but worth it and makes so much you can have it in your freezer for cold days. I always served it for large crowds.
