1 teaspoon olive oil
1 clove garlic, crushed
1 small brown onion chopped finely
2 carrots chopped finely
2 trimmed sticks celery chopped finely
1/2 cup lentils
1 1/12 cups water
1 1/2 cups chicken stock
1 bay leaf
1/2 can no-added-salt crushed tomatoes (or tomato sauce)
2 teaspoons no-added-salt tomato paste
1/2 cup fresh spinach
1/2 cup Ditalini pasta
1 tablespoon finely chopped fresh parsley

Directions:
Directions:
1 Heat oil in large saucepan; cook garlic, onion, carrot and celery, until onion is soft.

2 Stir in lentils, the water, stock, bay leaf, undrained crushed tomatoes(or tomato sauce) and paste. Bring to a boil; simmer, covered, for about 30 minutes or until lentils are soft.

3 Add spinach and Ditalini pasta the last 10 minutes.

4 Discard bay leaf. Sprinkle with parsley just before serving.
