1 c rolled oats or quick-cooking oatmeal
1 c buttermilk
1 c all-purpose flour
1 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1/2 c melted shortening or vegetable oil
1/2 c well-packed brown sugar
1 egg well beaten

Directions:
Directions:
Combine oats with buttermilk in a bowl and let stand while you turn on the oven. In another bowl sift flour with salt, baking soda and baking powder. To oatmeal mixture add shortening, sugar and egg. Stir in dry ingredients, mixing only long enough to moisten. Spoon into buttered muffin tins and bake in a 400ºF oven 15 to 20 min or until golden.
