2 lbs. chili meat (coarse ground lean beef)
2 large onion, chopped
2 cloves garlic, minced
2 oz chili powder, or more to taste
1/2 T. ground coriander
1 T. dried Mexican oregano
1 t. unsweetened cocoa
1 T. Paprika
1/2 t. cayenne
1 t. pepper
3 cloves garlic, minced
1 small can tomato paste
1 can (15oz) tomato sauce
3 qts chicken stock
1/2 cup masa whisked into 2/3 cup hot water or stock
kosher salt

Directions:
Directions:
In a large saucepan sprayed with Pam, brown the meat. Next add the onions and cook until the onions are soft. Add all other ingredients and simmer on the stove for an hour or so. Serve with crackers.

Dad would pull a chair up to the stove so that he and Jenny could cook this for the family. Many happy memories of this!
