There are others who are better at the cooking part but for several years Christmas sausage was a family tradition we enjoyed and shocked city folks with.
The process began with coming home from college on the last day of finals. After studying intensely for days, to make up for not going to class most of the semester, we would stay up late and tell tales of how the world was made until the small hours were upon us.
Mom would wake up late around four am and scan the yard for some ingredients while making sos or some other incredible breakfast. She would then roust her favorite child from slumber and ask him to save Christmas by providing wild game.
Tottering in boxer shorts, he would wrestle with the mighty kitchen window cranks. Once opened he would proceed to harvest a deer on the fringe of the forest. While the rest of the family slept in. The son and the Bulldogs would proceed to clean and quarter the feast to come. After the hard work was done, the weaker sister members would be pressed into duty. This is where the chef types figured out how to grind the critter in to sausage and stick it into casings. 'Twas a sight to behold. There may be other variants but this is the best
