2 teaspoons olive oil
1/2 yellow onion, diced
2 garlic cloves, minced
2 teaspoons chili powder
1 bay leaf
1 14-ounce can black beans, 
  rinsed and drained
1 tomato, diced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup water

Directions:
Directions:
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic. Sauté until the onions are translucent, about 5 minutes. Stir in the chili powder and bay leaf. Cook 2-3 minutes. Add the black beans, tomato, salt, pepper, and water. Bring to a low boil. Reduce heat to a simmer and cook 30 minutes, until done.

This is an excellent black bean recipe. The family loved it in combination with the other three "My favorite Mexican Dinner" recipes.

This is part of an entire meal that I call "My Favorite Mexican Dinner" it is the Black Beans, Cilantro Lime Rice and Shrimp Fajitas. My Favorite Mexican Dinner actually includes Tequila Sangria. All of these are in this cookbook. I made this entire meal one summer day on Lake Fenton and my family and friends loved it.
