1/3 cup salad or olive oil
2 Tbl. lemon juice
2 Tbl. white wine vinegar
1 tsp.sugar
2 tsp. chopped parsley
3/4 tsp. salt 1/4 tsp. pepper
3 medium zucchini
2 large red apples
1 cup sliced red onion
1 green pepper,chopped
1 cup celery,sliced
1/4 cup sliced radishes
Crisp salad greens

Directions:

1-In large bowl combine oil, lemon, vinegar, sugar and parsley, S&P.
2- Cut zucchini into quarters lengthwise; slice into 1/2" pieces.
3-Wash and quarter apples-cut into 1/2" pieces
4-Add remaining ingredients except salad greens to bowl and mix well.
5- Chill covered 1-2 hours.
6-Line bowl with salad greens-turn chilled mixture into center,mounding. Serve.

This sounds fresh and delicious..maybe a good choice for late summer or early fall when fresh zucchini is still abundant and apples are ripe and ready!
