2 medium eggplant,peeled and cut into 1/2" slices
Salt
1/2 cup extra virgin olive oil
Dressing
Flat leaf parsley
1/4 to 1/3 cup extra virgin olive oil
5 green onions,thinly sliced
4 ripe,large tomatoes,chopped
2 large garlic cloves,minced
juice of 1 1/2 to 2 lemons

Prepare eggplant and salt.let sit 20 minutes...then rinse. Prepare fire on grill(burning down). Spread foil over grill and brush with 2 Tbl. oil.Punch 12 holes in foil. Arrange eggplant on foil and cook,turn once and brush frequently with remaining 6 Tbl. oil until soft(about 20 min).Cool. Cut into eggplant into strips, transfer to bowl. Add all ingredients for dressing and toss well. Let stand for 2 hours before serving. Can be made 1 day ahead.

Its interesting that this was included on the same menu pages as the Asian recipes but not sure if it was actually made at that time. Sounds a lot like Baba Ghanoush.
