2 1/4 cups flour
2/3/cup sugar
1 Tbl. baking powder
1 tsp. salt
1/2 tsp. ground ginger
6 eggs
2/3 cup sugar
1/2 cup vegetable oil
3/4 cup cold water
1 tsp. vanilla
1/2 cup sliced natural almonds
1/2 cup honey

1-SIft floursugar,baking powder, salt and ginger into large bowl of mixer.
2-Separate eggs,putting whites into a second bowl and yolks on top of dry ingredients in mixer bowl.
3-Beat whites till foamy. Add second 2/3 cup sugar,1 Tbl. at a time.
4-Add oil,water and vanilla to bowl with yolks and dry ingredients. Beat with mixer 2 minutes.Fold batter into meringue with whisk until no streaks of yellow or white remain.
5- Grease angel food cake pan and sprinkle with sliced almonds to coat evenly. Spoon in batter,careful not to disturb nuts.:)
6- Bake in slow oven (325ºF) 1 hour, 10 minutes or till top springs back when touched. Cool
on rack 1 hour.
7- Loosen cake around edge with knife. Invert onto plate. Heat honey in small saucepan till bubbling. Brush over cake to coat evenly.

This recipe was mine and I still have the cookbook that it came from. Made it several times..very good after an Asian type dinner. I would substitute grated fresh ginger for the ground, and add it with the wet ingredients.But that's just me:) I know this was made when Lucia and I lived in Willowbrook and it is handwritten and mimeographed on construction paper. Times were tough!
