Buy 2 pork hocks for each person. Put them in a pan big enough to allow them all to sit on the bottom. Open a tin of sauerkraut, drain off the liquid and spoon the sauerkraut over the pork hocks. Add an onion chopped very fine. Sprinkle on a generous tsp of caraway seeds, a tsp of dill seeds and a tbsp. of brown sugar. Mess it all around so that there is a fairly even distribution of everything. pour over this one bottle of beer. Cover with a lid or aluminum foil and put in a 250ºF oven. cook it for at least three hours. Lift the lid occasionally and throw on some more ale. It tastes even better if you can cook it the night before then you only have to heat it through. Serve with baked potatoes topped with sour cream.
