3 c water
1 1/2 c butter
3 c sifted all-purpose flour
12 eggs

Heat oven to 400ºF. Combine water and butter in a large saucepan. Bring to a full rolling boil. Turn down heat and add flour all at once. Beat hard with a wooden spoon until mixture leaves the sides of the pan and forms into a ball. Remove from heat. Add eggs (unbeaten) one at a time beating very well after each addition. Continue beating until smooth and velvety. Drop by rounded teaspoonfuls about 1" apart on ungreased cookie sheets. Bake about 30 min or until puffed golden brown and dry to the touch. Cool on racks. Cut tops from tiny puffs about 2 hours before serving time. Pull out any soft dough from inside. Fill each puff with a level tbsp. of chicken salad filling. Replace tops and chill until serving time.
