1 lb. boneless skinless chicken thighs (about 4 thighs)
1 1/2 c. dry red wine
2 c. chicken broth
1 clove garlic, chopped
1 bay leaf
1 tsp. poultry seasoning
salt
pepper
2 c. chopped onions
2 c. chopped carrots
2 c. chopped celery or bok choy
2 c. sliced mushrooms
3 T. flour dissolved in 3/4 c. water

Put chicken (frozen chicken is OK), wine, broth, salt, pepper and spices in the crock pot. Cook on low 4 - 5 hours. Add vegetables. Cook 1-2 hours until vegetables are tender. Add flour dissolved in water and cook an additional 20 minutes.
