3 shallots, peeled and sliced
5 tbsp butter divided
½ cup heavy whipping cream
11 ounces cream cheese, softened and divided
3 tbsp mascarpone cheese
¼ cup chopped green onions
Salt and pepper to taste
1 lb crab meat
3 oz. Goat or Parmesan cheese
2 dozen baguette slices

Directions:
Directions:
Saute shallots in 3 tablespoons of the melted butter over medium heat until tender.
Add cream and simmer until mixture reduces by two thirds. Reduce heat to low and add 3 ounces of the cream cheese and the mascarpone cheese. While stiring, slowly add the rest of the cream cheese. Cook until thickened; add the green onions and remove from the heat.

Preheat oven to 350º. Brush baguette slices with remaining melted butter and salt and pepper to taste. Bake until golden.

Heat cream cheese mixture over low heat and gently fold in crab.
Put into a 1.5 quart baking dish, sprinkle with goat or Parmesan cheese and broil until cheese is melted and golden.

Serve immediately with baguettes.
