Ingredients: 1 whole chicken in pieces with skin and bones 1 onion 2 cloves garlic 1tsp salt Lots of Pepper 1 handful of rice 2 bouillon cubes (New addition to original recipe is to add one envelope of Lipton Onion Soup mix instead of boullion) 4-6c water or enough to cover chicken 14oz can crushed tomatoes 1/2lb macaroni cooked al dente

Directions:In a large pot, saute the onion and garlic in a little oil for a few minutes Add the chicken and cover with water. Add salt and pepper New addition: add 2 carrots and 2 stocks of celery. Break each in half. Simmer for about 1 hour, until the chicken is cooked Remove the chicken from the stock and remove the skin from the chicken. Remove the celery and carrots and discard. Add rice to the stock Cut up or shred the cooked chicken. Add as much of it as you desire. After rice has cooked for about 10 minutes, Add the Onion Soup mix, tomatoes and macaroni. Add the chicken and simmer another 10 minutes |

Notes: Who was Uncle Jumbo? He was Pearl’s brother in law. He was the original maker of this soup. Everyone loved it and it has been used in every family that has ever had it. Many variations have been made to the original. Uncle Jumbo was a favorite of all and also is named after the “Jumbo Squeeze” If you don’t know what that is, I dare you to ask one of the children and now grandchildren:)
