1/2 lb. bacon
6 green onions
6 cups sliced potatoes, cooked
2 T. flour
1 t. salt
1/3 t. black pepper
1 1/2 T. sugar
1/3 c. white vinegar
water
1/4 c. chopped parsley

Directions:
Directions:
Dice bacon, cook until crisp. Drain fat
Cook potatoes to yield 6c. sliced.
Thinly slice green onions. Separate white from green tops. Add green tops to cooked potatoes
In skillet, saute white portion in 1/4 c. bacon drippings. To that add 2T. flour, salt, pepper and sugar. Add 1/3 c. vinegar and 3/4 c. water. Cook and stir until slightly thick. Add bacon and pour over hot potatoes and green onion tops
Blend in chopped parsley and toss lightly
