2 quarts of half and half
2 cups sugar
1 teaspoon each of vanilla and almond extracts
1/2 box cornstarch
1 1/2 teaspoon cinnamon
12 oz miniature chocolate chips
Toasted almonds
Powder sugar

DAY AHEAD
Warm half and half in a pot - Do not let it boil.

Put in a bowl the sugar, cornstarch and cinnamon, mix and add 2 cups of the warmed half and half, beat with a whisk. Pour mixture into a pot with the rest of the half and half and add the extracts, simmer on low, using the whisk continually until very thick. Cover and put in the refrigerator overnight.

NEXT DAY
Take mixture out of the refrigerator and add the chocolate chips. Mix well and sit aside.

TO TOAST ALMONDS
Put almonds on a cookie sheet and toast for a few minutes (5 max) on 350. Watch carefully, don't over brown.

Stuff shells with the filling and dip the ends in the almonds. Sprinkle with powder sugar.
