One large turkey (1 lb. per person)

Rinse turkey thoroughly with cold water, drain and pat dry with paper toweling. Lock wings behind back and tie legs and tail together securely. Rub entire bird with peanut oil and season generously with sage. Put turkey in roast holder and position on cooking grill directly over drip pan. A 20 lb. turkey will require about 11 minutes per pound (185º F) to be well done. If the bird is stuffed, it is necessary to add 2 extra minutes per pound to cooking time.
For a 26-inch diameter grill, place 30 briquettes on each side of grill with drip pan in between. Each hour add 9 briquettes to each side.

I like to add some soaked wood chips (apple wood, cherry wood, pecan wood, or Jack Daniels wood) to the grill a few times during the cooking.
