10 eggs
½ c flour
1 tsp baking powder
½ tsp salt
2 c Cottage cheese
16 oz shredded Jack cheese
½ c margarine (I use butter) melted
2-4 cans green chilies

Directions:
Directions:
Beat eggs well, add remaining ingredients. Pour into 9 X13 baking dish. Bake at 350 degrees until firm in center, about 30-35 minutes. Serve with sour cream and salsa.

Personal Notes:
Baking hint…don’t use a stoneware pan to bake. The pan stays too warm and the cheese won’t set up right. I use a glass pan.

Add some fruit and bread and you have a yummy brunch!
