1 1/2 tubes coarsely crushed saltine crackers
2 1/2 lbs lean ground beef
1 egg
1 large yellow onion chopped fine
1/2 cup chopped bell pepper (optional)
1 rib celery,chopped fine (optional)
3/4 cup ketchup
1 tsp salt
1/2 tsp black pepper
bacon slices

Sauce:
2 tbsp melted butter
2 tbsp soy sauce
1 (8oz) can tomato sauce
1/4 cup water
1/4 cup vinegar
1/2 cup brown sugar

Directions:
Directions:
Mix all meat loaf ingredients; foam a loaf and place in center of a 9x13 pan so there is room on the sides for the loaf to drain while cooking. Pour sauce over the top keeping some for basting and cook at 350º for 1 hour and 15min. Baste with sauce every 5 min for the last 15 min.
