1 Rotisserie Chicken or whole bone in chicken or 3-6 bone in chicken pieces
Celery (I save & freeze the ends you would normally throw away)
Carrots (I save & freeze the ends you would normally throw away) and sometimes a little more
1onion with pealing on cut in to quarters so maybe a little smaller
6-8 whole allspice
6-8 whole black pepper
2-4 whole bay leaves
1-2 teaspoons seasoning salt
1-2 teaspoons poultry seasoning
1/2 teaspoon crushed garlic (optional)

Directions:
Directions:
Place chicken in large stock pot or Dutch oven 6 quart or larger cover with water, place all ingredients in and bring to a boil, turn down to a medium low and let cook for about 2-4 hours or longer. The stock will reduce and you may need to add a little more water to it.
Once you think it is ready you can strain the stock off, pick the chicken meat out and put back in to the stock. You can throw everything else away.
Now you are ready to either freeze for later use or make soup, chicken noodle, chicken dumpling or knoephla, wild rice soup and so many more options.
