2 c sifted all-purpose flour
3 tsp single-acting baking powder
1/2 tsp salt
3 tbsp. sugar
1 egg well beaten
3 tbsp. melted shortening (or cooking oil)
1 c milk
1/2 c chopped dates (or 1/2 c chopped dates and 1/4 c glace cherries)

Directions:

Mix and sift dry ingredients. Combine egg, shortening and milk. Make a well in center of dry ingredients and add wet ingredients and barely mix. Barely mix in dates or dates and cherries. Turn into buttered 12 c muffin pan filling them 2/3 full. Bake at 425ºF for 20 min.

You can use 1/2 to 3/4 c of any dried fruits you have on hand instead of dates or cherries, such as raisins, currants or chopped prunes or figs or apricots.
