1 (5 lb) beef heart
1/4 lb sausage meat
1 c dried bread crumbs
salt and pepper to taste
1/2 tbsp. onion juice
1/2 tbsp. minced parsley
2 tbsp. flour
2 tbsp. fat
1 1/2 c water

Directions:
Directions:
Wash heart thoroughly and remove veins, arteries and blood. In a bowl combine sausage meat and dried crumbs. Add seasonings, onion juice and parsley and mix well. Fill this stuffing into the heart cavity and tie up heart firmly with string to keep stuffing from falling out. Dredge with flour all over the outside. Dot with fat and place in ovenproof dish with tightly fitted cover. Add water and bake in preheated oven at 325ºF covered for 3 to 5 hours or until heart is tender. Thicken the drippings with flour to make gravy.
