1 cup milk
3 tbsp poppy seeds
3 eggs whites (large)
1 tsp almond flavoring
1 cup butter softened
1 1/4 cups sugar
3 egg yolks (large)
1 tbsp finely grated lime zest
2 cups all purpose flour
1 tbsp baking powder
1/2 tsp salt
2 tbsp hot water
3/4 cup icing sugar
6 tbsp lime juice

Directions:
Heat and stir milk and poppy seeds in a small saucepan on medium heat until very hot, but not boiling. Remove from heat. Let stand until room temperature

Beat egg whites and flavoring in medium bowl until stiff peaks form. Set aside.

Cream butter and granulated sugar in large bowl. Add egg yolks, lime zest and milk mixture. Beat well.

Combine flour, baking powder and salt in small bowl. Add to butter mixture. Beat will. Fold egg white mixture into flour mixture until no white streaks remain. Spread evenly in greased 10" angle food tube pan or spring-form pan. Bake at 325 for about 1 hour, until wooden pick inserted in center of cake comes out clean. Let stand in pan for 10 minutes before removing to serving plate.

Stir hot water into icing sugar in small bowl until smooth. Add lime juice, stir. Drizzle over hot cake, allowing syrup to soak in.

Cool. Then the cake is ready to serve.
