1/2 pound of butter
1 1/2 cups of sugar
3 cups of flour
1 cup of coconut
2 cups of raisins
1 cup of cherries
2 tsp vanilla
2 tsp baking powder
3 eggs
1 15 oz can of crushed pineapple (juice included)
1 tsp cinnamon

Directions:
Directions:
Beat together the butter, sugar and eggs. When well mixed add the pineapple and vanilla.

In a separate bowl mix a little flower with the cherries and raisins (will prevent the fruit from sinking to the bottom of the mixture)

In sugar mixture add dry ingredients, when well mixed add the cherries and raisins.

Bake for 2 hours @ 275. Ensure you wax paper and grease the pan. Cover the cakes until the last 1/2 hour. This will keep the cake moist. Makes two cakes using bread pans.
