5 Pickling Cucumbers
3 tbsp kosher salt
1 head fresh dill
2 garlic cloves,peeled, and halved
1/4 tsp black peppercorns
1/4 tsp celery seed
1 tsp mustard seeds
1 cup cider vinegar
1 or 2 dried red chili peppers/ jar
1 cup water

Trim the ends of cucumbers then quarter length wise or if using baby cucumbers leave whole. In a large non-reactive bowl toss cucumber spears with 2 tbsp kosher salt. Cover and refrigerate for 2 hours. Rinse cucumbers several times and pat dry. In a small sauce pan add water & vinegar and 1 tbsp salt. Bring to a boil. Add dill, garlic, peppercorns, celery& mustard seeds to a clean jar and chili pepper if wanted to a clean 1 gt. jar. Pack with spears, pour hot brine in container, let cool to room temp. about 2 hours. Cover and refrigerate for one day for flavor to develop. Should keep one month.
