1/4 cup butter
1 cup sugar
1 egg
1 cup sifted flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 tsp. vanilla
2 cups grated tart apples
1/2 cup chopped walnuts

Directions:
Directions:
Cream together butter and sugar. Beat in egg. Sift together flour,soda,salt and spices. Stir into creamed mixture. Stir in vanilla,apples and nuts.

Bake in a greased 8" square pan in 350º oven about 45 minutes. Serve warm with sauce or ice cream. Or freeze and can be reheated (unthawed) in slow oven at 300º for 30 min. Excellent served with Elin's Sauce.

Elin's Sauce- Hreat 1/2 cup butter ,1/2 cup light cream and 1 cup sugar to boiling point and simmer,stirring occasionally,20 minutes.
