2 6oz. jars marinated artichoke hearts
1 small onion,finely chopped
1 garlic clove,minced
4 eggs beaten
1/4 cup fine breadcrumbs
S&P
1/8 tsp oregano
1/8 tsp. hot pepper seasoning
2 cups shredded, sharp, cheddar cheese
2 Tbl. minced parsley

Preheat oven to 325º .Drain marinade from 1 jar of artichoke hearts into medium skillet. Drain second jar and DISCARD marinade (or save for use in a salad,etc...) Chop artichokes and set aside.

Heat oil, add onion and garlic and saute until onion is limp, about 5 min. Combine eggs, breadcrumbs, S&P, oregano and parsley. Add artichokes and sauteed onion mixture, blending well.

Pour into 9" square glass baking dish. Bake about 30 min. Allow to cool briefly before cutting into 1" squares.(Can also be served cold or room temp.)May be prepared a day ahead and reheated 10-12 minutes.

This is one of my all time favorites. I have made this and other variations and have added chopped pimiento or spinach during holiday season to give color.
