3/4 finely chopped mushrooms- button or crimini
1/4 cup shallot or onion finely chopped
2 tbsp. butter unsalted
1/4 tsp. black pepper
2 tbsp sour cream
12 slices very thinly sliced Black Forest Ham
12 large eggs

Directions:
Directions:
Cook mushrooms and onions in butter with salt and pepper till tender. Let liquid evaporate about 10 minutes
Remove from heat and add sour cream
Assembly: Cupcake tin lightly sprayed with cooking oil.
Fit 1 slice of ham in each muffin cup- divide mushroom mixture
Crack an egg in each cup salt and pepper to taste
Bake 15 minutes in a preheated oven 400º

the Ham becomes the container. I have added chopped peppers and cheese for variety. Very easy and good
