Three large yams
3/4 C brown sugar or a little more
1/2 tsp cinnamon
1/2 tsp ginger
1/2 cup butter of margarine
Marshmallows (Large or small)
Optional
Canned peaches or canned apricots minus the juices or dried craisons
Salt to taste

Directions:
Directions:
Boil whole yams until done, peel and discard the skins.
Slice yams into several semi thick wedges and set aside for the moment.
In a greased baking dish and for the bottom layer spread out the drained apricots or peaches, about 15 oz. and mash with a fork.
Place the yam wedges over the top of the canned fruit.
Distribute the butter/margarine evenly over the yams.
Sprinkle, brown sugar, cinnamon, ginger and salt evenly over the yams.
Crowd top with one layer of large marshmallow or about three layers of the small.
Bake at 350 degrees until marshmallows are slightly more then golden brown.

The canned peaches or apricots are a tasty option or....instead of, sprinkle a large handful of craisens over the top and before placing the marshmallows.
Or if you wish don't use any of the fruity/berry options but yer gonna miss something really great!
