1 1/2 c. sugar
3 Tbsp. corn starch
3 Tbsp. flour
dash of salt
1 1/2 c. hot water
3 slightly beaten large egg yolks
2 Tbsp. butter
1/2 tsp. grated lemon peel
1/3 c. lemon juice

1 baked 9-inch pastry shell

Meringue:
3 large egg whites
1/2 tsp. vanilla
1/4 tsp. cream of tartar
6 Tbsp. sugar

Directions:
In sauce pan mix first 4 ingredients; gradually add hot water, stirring constantly. Cook and stir over high heat until mixture comes to boiling. Reduce heat; cook and stir 2 minutes. Stir small amount of hot mixture into egg yolks, then return to hot mixture. Bring to boiling and cook 2 minutes, stirring constantly. Add butter and lemon peel. Slowly add lemon juice, mixing well. Pour into pastry shell.
Beat egg whites with vanilla and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff peaks form and all sugar is dissolved.
Spread meringue over top of lemon filling, sealing edges.
Bake in 350º F oven 12 to 15 minutes. Cool before serving.

Seems to always be a favorite pie.... sells fast at bake sales too. I got this recipe when we lived in Columbus, GA --- Howard was in NCO school --- what was that, maybe 1971.
