2 3/4 c. sifted flour
3/4 c. sugar
3 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs
1/2 c. salad oil
1 c. buttermilk
1 1/2 c. dried apricots, cut in thin strips
1 c. chopped nuts

Directions:
Directions:
Stir together dry ingredients saving out 2 Tbsp. flour to coat apricots and nuts. Beat eggs well, add oil and buttermilk. Add this mixture to the dry ingredients. Stir only until moistened. Dice apricots, either by hand or in food processor. Coat apricots and nuts with the 2 Tbsp. of flour; fold into batter. Pour into greased loaf pan. Bake at 350º F for 1 hour. Cool on rack.

This freezes well.... that is why I make in three small loaf pans. In CA we had an apricot tree in the yard and dried many each year; so this was great. This recipe came from Christine's Aunt Lynne that she got from Sally Danforth. (The Danforths did a small cookbook with many photos when he was running for Governor of Missouri.)
