½ c. butter, melted
4-6 cloves garlic, minced
1 large onion, chopped
1 bell pepper, chopped
1-1½ c. mushrooms, finely chopped (I use Shitake)
8 oz. French cheeses (Raclette, Gruyère melt well)
1 lb. crawfish tails, peeled (Louisiana is best)
½-1 c. seasoned breadcrumbs
Tony Chachere® seasoning, to taste
salt and pepper, to taste
½-¾ c. parsley, chopped
1 unbaked 9-in. pie shell
1-2 tbsp. green onions, chopped

Directions:
Directions:
Sauté onion, bell pepper and mushrooms in butter. Add cheeses, stir off heat until melted. Add crawfish. Add enough bread crumbs to thicken. Season with Tony's, salt and pepper. Stir in parsley and green onions. Pour into pie shell and bake at 350ºF for about 30-35 minutes. Can make ahead. Freezes well. Thaw before baking.
