oyster or other type mushroom( or combination of mushrooms)
butter
black pepper
a package of Boursin cheese
Endive leaves or lengths of celery stalks

Directions:
Directions:
Wash, chop and saute oyster mushrooms until well cooked (substitute another or a combination of mushrooms) in butter, with a bit of black pepper.
Cool partially, mince and stir in a package of Boursin cheese.
Mix thoroughly,and use to fill the endive leaves or celery stalks

Any outsider to the sport of Basseting might expect a dish called "Basseters' Bounty "to be a recipe for rabbit stew! But hunting with hounds and horn has traditionally created great sport out of the mere necessity for rural community pest control. Basseting, Beagling and Fox Hunting is not hunting for food but for the protection of food sources - the vegetable garden, pasture and poultry pen - by chasing the predators from the neighborhood.

So Basseters' Bounty, apart from excellent company and the great pleasure of the sport, includes the seasonal delights that present themselves for foraging in the woods along the way. The discovery of wild mushrooms is a favorite boon. In the fall and winter we're treated to Lion's Mane, Oyster mushrooms, Wood Ears; sometimes late Hen of the Woods and Chicken of the Woods. In the Spring we have been known to luck into a treasure trove of fabulous Morels!
