1/2 c. blanched almond slivers
1 (8 3/4-oz.) can pineapple tidbits
1/2 c. sliced green onions
1/2 c. sliced celery
2 c. cubed cooked turkey or chicken
1 c. seedless grapes, halved
1/2 c. mayonnaise
2 tsp. poultry seasoning

Drain pineapple well; saving 2 Tbsp. syrup. In a large bowl, toss almonds, pineapple, green onions, grapes, celery, and meat. Mix mayo, pineapple syrup, and poultry seasoning together and add to salad. Toss lightly. Serve on lettuce leaf if you like.

Often serve this with fruit salad and muffins. Sometimes I use pecans instead of almonds ... whatever I have.
I cook the chicken with onions, carrots, celery, bay leaves, peppercorns.... that way I have the chicken and chicken stock at the same time. And it adds flavor to the chicken.
