Gluten Free Turkey Gravy

Turkey is easy, just do not stuff the bird or stuff with gluten free dressing.
The flavor of both meat and gravy is enhanced by filling cavity with carrots & onions. Prior to cooking the turkey salt and pepper the bird inside and out. Edith likes to use HP seasoning salt. When the turkey is cooked remove the bird from the pan and cover to let rest. Scrape any brown bits off the pan and put the liquid from the pan into a heavy sauce pan. At this point you can remove as much fat as desired. A gravy separating cup works well. If the gravy is not flavorful enough you may want to add gluten free bouillon or a gluten free gravy maker. Club house makes gluten free ones. In Ontario several are available at Zehrs. Thicken the gravy using cornstarch or rice flour (see directions below)

Gluten Free Beef or Pork Gravy
Use same method as for turkey. Putting onions and carrots around the roast to add flavor. Discard vegetables as they will be over cooked
Beef or pork flavor bullion is available as are gravy mixes that will improve the flavor. Read the labels to be sure they are gluten free. How much you will need depends on your taste. Edith uses cornstarch to thicken gravy but rice flour works to. See directions below for how to thicken and finish the gravy.

How to thicken and finish the gravy:
It works best if you dissolve the gravy maker (or bullion) and the cornstarch (or rice flour) in a small amount of cool water to make a slurry. Gradually add the slurry to the gravy over moderate heat so that is just about to boil. Stir well to prevent sticking as the gravy thickens. It is best to add a bit at a time until the gravy reaches the desired thickness and flavor. Once the gravy is thick adjust the seasoning to taste

Linda almost always uses Club House Gluten Free Brown Gravy mix as her family does not like some of the seasonings in others. Using gravy maker means you may need less thickening as it has some in it. She also waits to adjust the seasoning till the gravy is thickened as both gravy makers and oxo cubes or other bouillon contain salt..
