12 oz. granulated sugar
6 fl. oz. whole milk
1 ½ Tbsp. all purpose flour
¼ tsp. salt
1 Tbsp. vanilla
1 ¼ lb. unsalted butter, cut up
3 fl. oz. heavy cream

Directions:
Directions:
Make a custard by heating the sugar and milk in a double boiler over simmering water until the sugar crystals dissolve. Remove from the heat, add the flour, salt, and vanilla; whisk until the flour is incorporated. Place over an ice bath until the custard has cooled slightly.
Pour the custard mixture into a mixer bowl. Add the cut-up butter and heavy cream and mix with the paddle attachment on low speed to fully incorporate the ingredients, or until the mixture starts to thicken.
Mix on the next higher speed until the mixture starts to look light and fluffy. This can take 7 to 10 minutes or longer if making larger batches.
Store the buttercream in an airtight container for 2 weeks in the fridge or freezer for up to 3 months.
NOTE: If the buttercream curdles, it will just take a longer time for the butter to warm up. Continue beating until the butter softens and the mixture looks light and fluffy.
Yield: 2 ½ - 3 lbs.
