2 large or 3 medium tomatoes
1 medium onion
3 jalapeños, seeds and ribs removed
3 garlic gloves
Lime juice from 2 limes
Fresh cilantro
Sea salt & fresh pepper
A pinch of cayenne pepper

Directions:
Directions:
Preheat oven to 400 degrees.

Roast whole tomatoes, onion halved, jalapeños, and garlic cloves under the broiler on high on a sheet pan with a lip. Use parchment paper or non-stick spray because the roasting juices will scorch the pan. Turn often and roast for about 8 minutes until blistered and somewhat softened. Take the garlic out before the rest so it doesn’t over-brown which will make it bitter.

Place all the veggies in a food processor and pulse until desired consistency. Add lime juice, cilantro, cayenne, and salt and pepper to taste, and then pulse again.
