5 tablespoons butter
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1 dash ground nutmeg
1 cup half and half cream
1 (4-ounce) package low-fat cream cheese
1 small onion, minced
3 cloves garlic, minced
2 (10-ounce) packages frozen chopped spinach, thawed
1/4 cup water
1/4 cup Parmesan cheese

Directions:

In a 2-quart saucepan over a medium-low heat, melt 3 tablespoons of butter. Stir in flour, salt, pepper, and nutmeg, then slowly whisk in cream and cream cheese.

Increase heat to medium. Whisk mixture constantly until thick and smooth. Then remove from heat and set aside.

In a skillet over a medium-high heat, cook onions and garlic in remaining 2 tablespoons butter until transparent. Stir spinach and water into the pan, and then reduce heat to medium-low, cover, and simmer for 8 minutes, stirring occasionally.

Stir spinach mixture into creamy mixture and return to medium heat until warmed throughout. Remove from heat and fold in Parmesan.
